Preparation: 15 minutes
Cooking: 35 to 55 minutes



Ingredients for 8

− 200 g flour
− 1 teaspoon baking powder
− 50 g brown sugar
− 1 egg
− 250 g honey (acacia or heather for example)
− 10 cl warm milk
− 50 g melted butter
− 1 pinch of salt
− 1 level teaspoon of cinnamon, ginger and mixed spice
− 1 small handful of dry fruit cut into dice (walnuts, hazelnuts, almonds, sultanas, dried apricots, dates, orange zest)

 

Preparation:

Mix the honey with the warm milk, add the melted butter and the flour. Next add the yeast, the brown sugar, the egg and the salt. Add the spice and the dried fruit to suit your taste.

Cook for 35 to 55 minutes in a loaf tin. Protect the top of the cake with some foil near the end. Check that it is properly by pricking with a knife.
