Spicy chocolate dessert cream

Ingredients :

- ½ L milk
- 3 egg yolks
- 15 g corn flour
- 1 large pinch of Espelette or chilli pepper
- 100 g dark chocolate
- 50 g sugar

 

Preparation:

Boil the milk with the pepper and infuse for 10 to 15 minutes. Add the chocolate and stir continuously until it melts.
Beat the eggs and the sugar, add the corn flour and pour the warm chocolate milk over it whilst stirring. Warm the preparation until it thickens.
Pour the cream into ramequins, let it cool down and chill in the fridge.
